Disney's Victoria & Albert's restaurant just earned the company its first Michelin star. It's the first time a US theme park restaurant has achieved the culinary honor, Disney said. While cooling inflation and a robust GDP reading that smashed economists’ expectations are reasons to be optimistic about the US economy, one key economic engine seems to still be sputtering: small businesses. Small business owners say they’re still grappling with the hangover effects of inflation and a labor shortage, according to the National Federation of Independent Business’s most recent monthly survey, which was conducted in January. NEW YORK (AP) — David Bouley, the award-winning and frenetic chef whose idiosyncratic haute cuisine and crusty breads pleased critics and the public during a career chasing sleek deliciousness, has died. Bouley died of a heart attack Monday at his home in Kent, Connecticut, according to Lisa Queen, his literary agent. Other restaurants he worked in include Danube, Bouley Bakery, Upstairs at Bouley, Bouley at Home, Secession and Brushstroke, a collaborative effort with the Tsuji Culinary Institute in Osaka, Japan. Danube and Bouley Bakery each earned two Michelin stars. The restaurant Bouley — which famously had a foyer filled with apples — closed in 2017 after 30 years and several location changes, earning a three-star from the New York Times the year previously.

London CNN —Growing up in Nigeria as the oldest sibling, Adejoké “Joké” Bakare was usually the one cooking for the family. Now, her restaurant Chishuru has been awarded a Michelin star, making Bakare the first Black female chef in the UK to earn the accolade. In the West African language of Hausa, Chishuru means “the silence that descends on the table when the food arrives,” according to Bakare. She explained that she’s never looked to create an “authentic” restaurant for West African cuisine, but instead fuse different styles together and create new recipes. Italy's food is famous the world over but many talented young chefs, hoping to make a career in their country, find themselves frustrated by low pay, lack of labour protection and scant prospects. The current outflow of Italian chefs due to difficult conditions at home is not a new phenomenon. A peep into the kitchens of even the most traditional Italian restaurants shows the local dishes are often prepared by low-paid immigrants. Partly for this reason, young chefs in Italy take home half the salary of their peers in Britain while working longer hours, Mazzei said. British people have become knowledgeable about Italian food, even learning about regional differences, he said, so he preferred to hire Italian chefs to satisfy an increasingly demanding clientele.

Insight: Italy is no country for young chefs

For the past year, the 25-year-old has cooked at Piccola Cucina, an Italian restaurant in Manhattan's glitzy SoHo district, home to designer boutiques and high-end art galleries. The current outflow of Italian chefs due to difficult conditions at home is not a new phenomenon. A peep into the kitchens of even the most traditional Italian restaurants shows the local dishes are often prepared by low-paid immigrants. Partly for this reason, young chefs in Italy take home half the salary of their peers in Britain while working longer hours, Mazzei said. British people have become knowledgeable about Italian food, even learning about regional differences, he said, so he preferred to hire Italian chefs to satisfy an increasingly demanding clientele.

Frederick Wiseman’s transporting documentary “Menus-Plaisirs — Les Troisgros,” centers on a dynasty of French chefs who live and work in a pastoral region in central France named Ouches, some 65 miles west of Lyon. The chef Daniel Boulud includes the Troisgros salmon recipe in several of his cookbooks. “Menus-Plaisirs” is Wiseman’s 44th documentary and the first that he’s made since “City Hall” (2020), which notionally focuses on the administration building for the city of Boston. (In between “City Hall” and “Menus-Plaisirs,” he made one of his rare forays into fiction, “A Couple,” about Sophia Tolstoy.) Wiseman directed, edited and served as one of the producers on “Menus-Plaisirs,” which runs a heroic four hours (about a half-hour shorter than “City Hall”!).

A Salt-of-the-Earth Town That Sparkles

After he closed Cyrus, the Healdsburg, Calif., restaurant for which he’d earned two Michelin stars, in 2012, it took the chef Douglas Keane a decade to scout the dream locale for his new restaurant. Mr. Keane finally landed last year at a former prune-packing plant overlooking vineyards where the Russian River snakes through the Alexander Valley. Those vineyards are not in Healdsburg, Sonoma County’s unofficial gastronomic headquarters, but eight miles north in blink-and-you’ll-miss-it Geyserville. “Geyserville is real, rural wine country: Farmers are out at 5 a.m.,” said the 52-year-old chef on what drew him to the town. The whole town may be just two blocks of Wild West-looking storefronts, but its charms take an entire weekend to uncover.
